Chorizo Recipe
5 garlic cloves, crushed
4 tsp paprika
2 tsp chilli powder
1/2 tsp black pepper
1/4 tsp cloves, ground
1/4 tsp cinnamon, ground
1/4 tsp oregano, ground
1/4 tsp cumin, ground
1/2 tsp salt
1 tsp oregano leaves
1/2 cup vinegar
2 lb pork, ground
This is the closest thing I have been able to find
to a Goan Chourisso recipe.
I've adapted it from a recipe I found and it works ok,
though it comes out slightly vinegary and rather crumbly.
This may be because the meat I used was not fatty enough.
Crush the spices in a pestle and mortar and add with the vinegar to the pork.
Mix thoroughly together then cover and refrigerate for 24 hrs.
Use a sausage machine to fill the sausages.
